It was a dish offered to pilgrims travelling along the<strong> Via Francigena<\/strong> in the Middle Ages.<\/p>\n<p>The dish was different from what is eaten today, but it retains the same nutritional elements.<\/p>\n<p>The basic ingredients are flour, breadcrumbs for the <em>pissarei<\/em> and beans for the sauce, which, with the discovery of the Americas, were enriched with tomato.<\/p>\n<p>Initially, it was served as a <strong>broth dish<\/strong> and the beans used were <strong>black-eyed peas<\/strong>. Nowadays, it is more common to find it with borlotti beans and \u201cmorbida\u201d (in Piacenza dialect, barzotta) tomato pur\u00e9e.<\/p>\n<p>To flavour the dish, the sauce is enriched with a fatty pork base (pist\u00e0 &#8216;d grass).<\/p>\n<p>The <strong>origin<\/strong> of the name is unclear. With a piece of the dough obtained form a &#8220;snake&#8221; of the thickness of about half a centimeter, from which you will get the<em> pissarei<\/em> separating the individual pieces of equal size.<\/p>\n<p>To give each of them the traditional shape proceed in this way: place the piece of dough on the cutting board and, with a tap given with the edge of the thumb, crush it to give the characteristic shape of a shell.<\/p>\n<p>At the same time fry together the butter, a chopped spring onion, parsley and, if you wish, a clove of garlic and some crushed lard (<em>pist\u00e0 ad gras<\/em>).
