BATARÒ DE.CO (bread)

Batarö is a sort of bread DE.CO (Municipality Denomination) of the municipality of Alta Val Tidone.
It’s an ancient product, that reminds to those time when mothers aunts and grandmas used to keep some dough apart to test the temperature of the oven and then they used the result to prepare a snack for the children, creating small sandwiches.

Nowadays the Batarö is a sort of sandwich made with at least three different kinds of flours, it’s very thin, without crumb.

It’s possible to eat it with sweet or salted products.

INGREDIENTS

Flour (secret mix)
Water
Yeast
Olive Oil
Salt

PREPARATION

Add boiled salted water to the 30 % of the flour mix, until the mix absorbes all the water.
When the dough is cold add the rest of the flour and the yeast. The dough must be soft and compact.

Let rise for  about 2 hours. The dough must double.
Let it rest for 30 minutes.

Form balls the size of a fist, roll them out and put them in the oven.

The batarö has to be backed in the wood-burning-oven, but the temperature doesn’t have to be too hot.

Once it swells it’s ready!
