The Chisöla (focaccia with ciccioli – pressed cakes of fatty pork) is a De.Co (Municipality Denomination) of the Municipality of Borgonovo Val Tidone.

Legend has it that Frederik Barbarossa’s army was resupplied with this product during one of their travels in the area where the municipality of Borgonovo Val Tidone was founded. It happened in 1155.

The product belongs to he paesant tradition. The ingredients are simple and nourrishing: flour, yeast, water, salt, lard, ciccioli.
Ciccioli give sapidity and caloric intaketo the focaccia.

Every year in September a feast celebrate the product in Borgonovo V.T.

  • white flour
  • ciccioli – obtained by processing pork fat –
  • yeast
  • lard
  • water
  • salt
PREPARATION

The quantities of the recipe deposited are secret, a possible preparation follows:
Knead 500 g flour with lukewarm water and yeast, add salt, form a loaf.
Separately pan-fry the ciccioli with lard (quantities may vary according to personal taste).
Add the ciccioli to the dough and leave to rest for about 2 hours.
The dough should rise by at least 1 cm.
Bake at 180° for about 30 minutes.
