Busslan is a doughnut, the term apparently derived from ‘bucella’ meaning ‘small bite’. A sweet made from a few simple ingredients, it is suitable as a breakfast cake or in a mouth-watering version accompanied by eggnog.
Make a well in the flour and put in the center the soft butter in pieces and the sugar, then the 3 egg yolks, a pinch of salt, a little grated lemon rind, the yeast and knead, pouring the milk into the mixture little by little. Pour the mixture into a buttered pan; bake for about 1 hour at 180°C (350°F). If you wish, before baking, you can brown the surface with the beaten white of an egg (using a kitchen brush) and sprinkle it with granulated sugar and chopped almonds.
