CROSTATA DI NONNA NINA DE.CO. (Grandma’s Tart)

The recipe for crostata della nonna Nina (Grandma Nina’s tart) is a cake that has received the Municipal Denomination in Rottofreno. The base of short pastry is crispy while the filling is the result of a combination of flavors ranging from amaretto to almonds to plum jam.

INGREDIENTS
  • 500 gr of white flour
  • 250 gr. of soft butter at room temperature
  • 250 gr. of sugar
  • 5 egg yolks
  • 100 gr of amaretti biscuits
  • 100 gr of almonds
  • 1/2 glass of milk
  • a pinch of salt
  • grated peel of a lemon
  • plum jam
PREPARATION

In a bowl put flour, egg yolks, sugar, butter pieces, salt, lemon peel, almonds and macaroons powder. Knead using the milk without working the dough too long. Line a cake pan, previously buttered and floured, with 3/4 of the dough, sprinkle with jam and cover with the remaining dough. To obtain a crispy tart, use a potato masher with large holes to cover the pie to make the dough fall into small crumbs.

Bake at 180° for 1/2 hour, then lower the oven to 140°-150° for another 15 minutes.
